Culinary Arts

Vista Adult School's Culinary Arts program is designed for aspiring chefs who want to pursue a career in culinary arts. The curriculum is focused to provide the students with both theory along with the hands on skills. This multi-level program combines preparation, food safety, and business management skills. Opportunities include Chef, Prep Cook, Kitchen Manger, Hospital Food Services, Wait Staff, and much more. Our program is located in the new state of the art Industrial Culinary Lab at Vista High.

Food Handlers Training

$35 (Card fee included)

This three-day class will provide the training necessary to assist students in getting their Food Handlers card. This card is necessary for those potential employees who are interested in working in the preparation, storage or service of food in a food facility. This class will cover food safety practices to maintain a safe and healthy working environment.

Culinary Arts 1

$400 (Same book used in Foundations class)

Culinary Arts 1 uses a hands-on learning environment to develop industry-driven culinary skills. Throughout this first course in the sequence and Culinary Art 2, students will collaborate to develop an understanding of the historical and cultural influences on cuisine, the science of culinary processes, and engage in analyzing the contents and properties of food. Students will use traditional and emerging food preparation methods to prepare recipes. Students expand upon their knife skills in order to meet industry standards. Students will use critical and innovative thinking and be challenged to build reading, writing, and speaking skills throughout the course. Emphasis will be on quality food preparation and presentation, collaboration, developing a critical palate and exploring current culinary trends. In this course students will keep a journal, documenting their learning through reflections. They will also develop a professional portfolio. 

What to bring: Close-toed shoes are mandatory. High heels, open-toed shoes, sandals, flip flops are not allowed in the kitchen.
